  • 0. For the dough: Sift the flour and salt into a bowl, then add the egg and water and begin kneading with your hands. Then add the oil and continue kneading until the dough is smooth. If it's too sticky, add a little more flour. Transfer the dough to a surface and knead until it's elastic. Once you're done, shape it into a ball and transfer it to a lightly greased bowl, cover with plastic wrap, and let it rest for an hour.
  • 1. For the filling: Soak the raisins in rum, or, if you prefer, in warm water. In a pan, melt 30g of butter and, when it sizzles, toast the breadcrumbs. Stir and let them brown for a few minutes, then turn off the heat and let them cool. Peel the apples, removing the cores, and cut them into thin slices. Place the apples in a large bowl and add the sugar, pine nuts, grated lemon zest, a pinch of cinnamon, and the well-drained and squeezed raisins.
  • 2. Assembly: Melt the remaining butter in a small saucepan over low heat. Then, take the dough and roll it out on a lightly floured cloth, forming a rectangle. Brush the surface, except the edges, with a little melted butter and sprinkle with toasted breadcrumbs. Arrange the apple mixture on top. Roll up the strudel, sealing it well on the sides as well.
  • 3. Baking: Place the strudel on a baking sheet lined with parchment paper, seam side down, and brush with melted butter before baking. Bake in a preheated oven at 200°C (390°F) for about 40 minutes (or 30 minutes in a fan-assisted oven at 180°C). Once cooked, dust the strudel with powdered sugar and serve warm, cut into slices.
