  • 1. Let it rise, covered with plastic wrap, for about 4 hours in a warm place. Then take the dough and divide it into four balls. Let it rise for about 2 hours. Meanwhile, let the passata infuse in a bowl, adding salt, oil, and oregano.
  • 2. Once the dough has risen, roll out the dough and cut out four discs. Fill the discs with tomato sauce, prosciutto, and mozzarella. I recommend squeezing the mozzarella well to prevent it from soaking the dough. Seal the calzones and brush the tops with extra virgin olive oil. Bake in a preheated oven at 220°C (425°F) for about 18 minutes.
