  • 0. Peel the potatoes and cut them into small pieces. Cook the potatoes in boiling salted water until tender. Drain and mash them with a fork. Grate the zucchini and squeeze out excess water. Dice the bell pepper into small cubes.
  • 1. In a pan, sauté the chopped onion and garlic in a little olive oil until golden. Add the diced peppers and cook for a few minutes until tender. Add the grated zucchini and cook for another 3-4 minutes, until the vegetables are cooked through and the water has evaporated.
  • 2. In a large bowl, combine the mashed potatoes, bell peppers, and cooked zucchini. Add the grated Parmesan cheese, egg, breadcrumbs, herbs, salt, and pepper. Mix well until smooth. If the mixture is too soft, add a little more breadcrumbs.
  • 3. Take small amounts of dough and shape them into balls with your hands. Roll each ball in extra breadcrumbs to obtain a light coating.
  • 4. Preheat the air fryer to 220°C. Arrange the meatballs in the fryer basket in a single layer, without overlapping. Lightly drizzle the meatballs with olive oil. Cook for about 15 minutes, flipping halfway through, until golden and crispy.
  • 5. Serve the vegetable meatballs warm, accompanied by a sauce of your choice, such as Greek yogurt flavored with fresh herbs or a light tomato sauce.
