  • 0. For the rice: Rinse the rice 5-6 times in a bowl to remove any excess starch. Pour it into a pot, cover completely with water, add a level teaspoon of salt, stir, cover, and bring to a boil. Cook for about 12-15 minutes, then turn off the heat and let it sit for about 10 minutes. In a bowl, combine the sugar and vinegar. Add to the rice.
  • 1. Clean the avocado and cut it into slices, also cut a cucumber into thin slices and set everything aside.
  • 2. Take a bamboo mat, cover it with plastic wrap, and place a sheet of nori on top. Cover the nori with rice, smoothing it out evenly with wet hands, and fill the center with slices of smoked salmon and cucumber or avocado. Roll up the nori with the rice using the bamboo mat. Once it's rolled up, close it with plastic wrap, taking care to form a nice rounded shape. Repeat with the remaining rolls.
  • 3. If you want to vary, you can prepare a roll with a rice base, the seaweed in the center and the salmon on top, which should be added after cutting the sushi slices.
  • 4. Keep the rolls wrapped in cling film in the refrigerator for a couple of hours, then cut the sushi into slices using a sharp knife, taking care to wet it between each slice.
