Pesce spada in padella con calabrisella
Ingredients
- Swordfish1 Kg
- Extra virgin olive oil50 ml
- Garlic2 cloves
- Parsleyto taste
- Fine saltto taste
Procedure
0. First, place the swordfish on a plate to collect the liquid. Prepare the calabrisella. In a blender, add the olive oil, a pinch of salt, two cloves of garlic, and the parsley, removing the larger sprigs. Blend until a green cream forms.
1. Pour a little oil into a nonstick pan and add the swordfish. Cook over low heat to prevent the fish from frying. Once cooked, transfer to a plate and drizzle with a little of the parsley cream.
