Procedure
0. Syrniki are traditionally made with a fresh cheese called tvorog. Tvorog is a type of fresh ricotta with a grainy texture and a slightly tart flavor. This cheese is very common in Russia and Eastern European countries and is similar to the ricotta found in Italy.
1. In a bowl, combine the ricotta, egg, sugar, salt, and vanilla extract. Add the flour and mix until the dough is smooth and not too sticky. If the dough is too wet, add a little more flour, one tablespoon at a time.
2. With lightly floured hands, take a small portion of the dough and form balls. Gently flatten each ball into discs about 1 cm thick.
3. Heat oil or butter in a nonstick pan. Cook the syrniki over medium-low heat for about 3-4 minutes per side, until golden brown and cooked through.
4. Serve the syrniki hot, accompanied by sour cream and berry compote or jam of your choice.
