Ingredients
- Corn tortillas200 g
- Carrots150 g
- Chicken breast150 g
- Bell pepper150 g
- Red onion100 g
- Prawns100 g
- Cherry tomato80 g
- Lime3 u (150 g)
- Avocado1 u (300 g)
- Fine saltto taste
- Extra virgin olive oilto taste
- Corianderto taste
- Black pepperto taste
Procedure
0. Start by preparing the baskets. Take the tortilla discs and place them in a baking dish of the desired shape. Brush them with a drizzle of extra virgin olive oil. Bake at 200°C (390°F) for about 10 minutes, or until golden brown.
1. In a bowl, combine the previously cleaned and diced pan-fried shrimp with the lime juice, salt, pink peppercorns, oil, and chopped cilantro. Cover with plastic wrap and refrigerate for at least 3 hours. Meanwhile, add a drizzle of nonstick oil to a pan and sauté the cleaned and stripped peppers along with the sliced carrots and a pinch of salt. Add the shredded chicken and continue cooking until the chicken is charred.
2. Once the marinating time is up, finely chop the red onion, dice the avocado, and chop the cherry tomatoes. Add the chopped vegetables and the chicken to the marinated shrimp. Mix well and season with salt and pepper. Arrange the prepared filling in the baskets and, before serving, garnish your marinated shrimp taco baskets with fresh cilantro.
