  • 0. Roll out the shortcrust pastry until 3 mm thick on a lightly floured surface and cut out a 24 cm circle, using a plate as a guide. Prick the surface lightly with a fork, place on a baking sheet, cover, and freeze while you prepare the apples.
  • 1. Preheat the oven to 180°C. Peel, quarter, and core the apples. Cook the sugar in a saucepan for 5-7 minutes until the syrup becomes a dark amber caramel that begins to smoke. Then turn off the heat and stir in the 60g of cooled, cubed butter.
  • 2. To assemble the tarte tatin, arrange the apple quarters tightly in a circle around the edge of the plate, rounded side down, then fill the center in a similar manner. Press gently with your hands to avoid any air pockets. Brush the fruit with melted butter.
  • 3. Bake for 30 minutes, then remove and place the frozen puff pastry disc on top, which will thaw quickly. Fold the edges back into the baking dish and, using a knife, poke a few holes in the pastry to allow steam to escape. Bake for another 40-45 minutes until the puff pastry is golden and crispy.
  • 4. Let cool at room temperature for 1 hour before running a knife around the edge of the dish and inverting it onto a large serving platter deep enough to contain the juices. Serve with crème fraîche or vanilla ice cream.
