Ingredients
- Golden apples900 g
- Puff pastry300 g
- Brown sugar100 g
- Butter85 g
- Type 00 flourto taste
Procedure
0. Roll out the shortcrust pastry until 3 mm thick on a lightly floured surface and cut out a 24 cm circle, using a plate as a guide. Prick the surface lightly with a fork, place on a baking sheet, cover, and freeze while you prepare the apples.
1. Preheat the oven to 180°C. Peel, quarter, and core the apples. Cook the sugar in a saucepan for 5-7 minutes until the syrup becomes a dark amber caramel that begins to smoke. Then turn off the heat and stir in the 60g of cooled, cubed butter.
2. To assemble the tarte tatin, arrange the apple quarters tightly in a circle around the edge of the plate, rounded side down, then fill the center in a similar manner. Press gently with your hands to avoid any air pockets. Brush the fruit with melted butter.
3. Bake for 30 minutes, then remove and place the frozen puff pastry disc on top, which will thaw quickly. Fold the edges back into the baking dish and, using a knife, poke a few holes in the pastry to allow steam to escape. Bake for another 40-45 minutes until the puff pastry is golden and crispy.
4. Let cool at room temperature for 1 hour before running a knife around the edge of the dish and inverting it onto a large serving platter deep enough to contain the juices. Serve with crème fraîche or vanilla ice cream.
