  • 0. Rinse the rice under cold water until the water runs clear. Cook the rice in a pot with twice the volume of water as the rice, bringing to a boil and then reducing the heat. Cover and cook for about 15-20 minutes, until the water is completely absorbed and the rice is tender.
  • 1. In a small saucepan, combine the soy sauce, brown sugar, rice vinegar, mirin, garlic, and ginger. Bring to a boil, then reduce the heat and simmer for about 3-4 minutes. Dissolve the cornstarch in a tablespoon of water and add it to the sauce to thicken it slightly.
  • 2. Continue stirring for another 1-2 minutes, then remove from the heat.
  • 3. Heat the oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, or until golden brown and cooked through. Brush the chicken with teriyaki sauce during the last few minutes of cooking to caramelize the surface.
  • 4. Once cooked, remove the chicken from the pan and let it rest for a couple of minutes before slicing it thinly.
  • 5. Place a portion of cooked rice in a bowl. Arrange the teriyaki chicken slices on top and garnish with sliced fresh spring onions and toasted sesame seeds. If desired, you can drizzle a little extra teriyaki sauce over the rice for extra flavor.
