Ingredients
- Dark chocolate400 g
- Butter250 g
- Granulated sugar250 g
- Type 00 flour100 g
- Fresh cream100 ml
- Unsweetened cocoa powder50 g
- Eggs4 u (240 g)
- Honey3 tablespoons
- Baking powder1 teaspoon
Procedure
0. Preheat the oven to 180°C. Melt the chocolate and butter in a double boiler or in the microwave, stirring until smooth. In a bowl, beat the eggs and sugar until light and fluffy. Add the melted chocolate and mix well.
1. Sift the flour, cocoa, and baking powder, and gently fold them into the mixture. Pour the batter into a baking pan lined with parchment paper and bake for about 25-30 minutes. Let it cool completely in the pan.
2. Making the Fudge: Melt the chocolate, cream, butter, and glucose syrup in a double boiler, stirring until smooth. Pour the fudge over the cooled cake base and smooth it out with a spatula. Refrigerate for at least 4 hours before serving.
3. Tips: For a richer fudge, you can add chopped walnuts or chocolate chips to the mixture. Make sure to let the cake cool completely before adding the fudge, otherwise the heat will melt the coating.
