Ingredients
- Turkey breast300 g
- Basmati rice120 g
- Cumin1 teaspoon
- Garlic1 clove
- Turmeric1 teaspoon
- Black pepperto taste
- Parsleyto taste

Procedure
0. Cut the turkey into strips or bite-sized pieces. In a bowl, combine all the marinade ingredients. Add the turkey and toss well to coat evenly. Cover and let rest for 20 minutes at room temperature (or in the refrigerator if it's hot). Then cook directly in a hot nonstick pan, without oil, possibly with a drizzle of water or broth to prevent sticking.
1. Rinse the basmati rice under running water until the water runs clear. Place it in a small saucepan with double the amount of water or broth (e.g., 120 g rice → 240 ml water). Add a pinch of salt, bring to a boil, then reduce the heat to low, cover, and cook for about 10 minutes, or until all the water is absorbed. Once cooked, turn off the heat, add the chopped parsley, and set aside, covered.
2. In a hot nonstick pan, add a splash of water (or vegetable broth). Add the minced garlic (if using), then the turkey. After 2-3 minutes, add the turmeric, cumin, salt, and pepper. Cook over medium-high heat for about 6-8 minutes, adding a little water or broth if necessary to prevent the turkey from drying out. When the turkey is golden brown and cooked through, turn off the heat and add the lemon juice and a little fresh parsley.
