  • 0. Dice the onions, carrots and celery
  • 1. Sauté with a drizzle of extra virgin olive oil for 5 minutes. Meanwhile, prepare the broth by dissolving a little stock cube in a small saucepan with water.
  • 2. Add the spinach (frozen is fine too). Wilt it, adding the previously prepared broth.
  • 3. Drain and rinse the beans and add them with more broth. Then let them cook for about twenty minutes.
  • 4. Meanwhile, cut the bread into cubes and toast it in a pan with a drizzle of extra virgin olive oil and a pinch of salt.
  • 5. Serve the soup hot, placing the croutons on top.
