Ingredients
- Carrots6 u (450 g)
- New potatoes4 u (300 g)
- Extra virgin olive oil1 tablespoon
- Fine saltto taste
- Sweet paprikato taste
- Dried oreganoto taste
Procedure
0. If they're small enough, cut the potatoes in half (otherwise, quarter them) and peel the carrots. Cut the carrots into chunks. Boil them in salted water for about 7 minutes.
1. Preheat the air fryer to 200°C (400°F) for about 3-5 minutes. In a bowl, toss the diced potatoes and carrots with the olive oil, paprika, salt, and pepper, making sure they're well coated. Add oregano, if desired.
2. Cook the vegetables in the air fryer for about 20-25 minutes, shaking them halfway through to ensure even cooking. Once the potatoes and carrots are golden brown and tender, they're ready to serve as a delicious side dish or snack!
