Assapora il riso Venere con zucca, un piatto elegante e colorato che unisce il gusto intenso del riso nero alla dolcezza della zucca. Ideale per un pasto sano e raffinato.
Ingredients
- Pumpkin500 g
- Red beans (precooked)250 g
- Venere rice180 g
- Bell pepper3 u (660 g)
- Honey1 teaspoon
- Golden onion1 u (150 g)
- Extra virgin olive oilto taste
- Parsleyto taste
- Tomato pasteto taste
Procedure
0. Start by toasting the Venere rice in a pan with olive oil. Gradually add hot water with a pinch of salt or vegetable broth, at least twice the weight of the rice. Cook over low heat for 45 minutes.
1. In a pan with a drizzle of olive oil, chop the onion and sauté it in a little water. Season with a teaspoon of honey. Add the cleaned red peppers, deseeded, and cut into strips.
2. Clean the pumpkin, removing the inside with the seeds and the tough peel, cut it into small pieces and add it to the pan, sauté for two minutes together with the peppers and onion and add a little water again to prevent it from sticking.
3. Add four tablespoons of tomato pulp or a little tomato juice from a tube and stir. Add a little water to keep the vegetables from sticking. When the squash is tender when tested with a fork, add some canned or glass jarred red kidney beans, draining them of their preserving liquid.
4. Finally, when the rice is cooked al dente, arrange it on plates with the vegetables in the center. Add chopped parsley or a tablespoon of grated vegan cheese, if desired.
