Ingredients
- Roast beef1 Kg
- Beef broth500 ml
- Celery150 g
- Carrots2 u (150 g)
- Garlic1 clove
- Golden onion1 u (150 g)
- Bay leaf1 leaf
- Black pepperto taste
- Fine saltto taste
- Rosemaryto taste
- Extra virgin olive oilto taste
Procedure
0. Wash and roughly chop the carrots and celery. Peel the onions and cut them into quarters. Lightly crush the garlic cloves without removing the peel.
1. Tie the roast with kitchen twine to keep its shape while cooking. Season it with salt and pepper on all sides.
2. In a large, heavy-bottomed pan, heat a little extra virgin olive oil. Once the oil is hot, add the roast and sear it on all sides until golden brown.
3. Add the hot beef broth until it covers about half of the roast. Cover the pan with a lid and cook over very low heat for about 3 hours. Turn the roast occasionally and check that the cooking liquid doesn't dry out too much. If necessary, add more broth or hot water.
4. After three hours, check that the roast is tender and cooked through. Remove the roast from the pan and let it rest for a few minutes before slicing. Strain the cooking juices and reduce them if necessary to obtain a thick, flavorful sauce to serve with the roast.
5. Tip: For an even richer flavor, you can add a few dried porcini mushrooms soaked in broth. Serve the roast with sides like roast potatoes, mashed potatoes, or grilled vegetables.
