  • 0. Finely crush the cocoa biscuits using a blender. Mix the crushed biscuits with the melted butter (100 grams) until smooth. Add the cocoa powder.
  • 1. Divide the mixture into the tartlet molds, pressing it firmly into the bottom and sides. You can use the back of a spoon to help. Refrigerate the tartlets for at least 30 minutes to firm up.
  • 2. In a saucepan, melt the sugar over medium heat, without stirring, just swirling the pan gently, until it turns golden caramel. Add the fresh cream (be careful not to splash) and stir well.
  • 3. Add the butter and a pinch of salt, stirring continuously until the mixture is smooth and glossy. Let the caramel cool to room temperature.
  • 4. Pour the cooled caramel into the tartlet bases, filling them almost to the brim. Garnish the caramel tops with pecans, almonds, cashews, or any other nuts you like.
  • 5. Place the tartlets in the refrigerator for at least an hour, so that the caramel solidifies slightly.
  • 6. The tartlets are ready to serve. You can accompany them with a cup of coffee or cappuccino, as pictured.
