Ingredients
- Buckwheat noodles (Soba)300 g
- Tofu200 g
- Spring onion50 g
- Teriyaki sauce10 ml
- Soy sauce2 tablespoons
- Carrots1 u (75 g)
- Sesame oil1 tablespoon
- Light zucchini1 u (150 g)
- Garlic1 clove
- Sesame seedsto taste
- Black pepperto taste
- Fine saltto taste
- Chili pepperto taste
Procedure
0. Dry the tofu cubes thoroughly with paper towels. In a nonstick pan, heat a tablespoon of oil and fry the tofu until golden brown on all sides. Set aside.
1. In the same pan, add a drizzle of oil if needed and sauté the garlic and chili pepper for 30 seconds. Add the carrots, zucchini, and spring onion (sliced into strips) and sauté over high heat for 4–5 minutes, until crispy.
2. If the noodles are dry, boil them in boiling water according to the package instructions, drain them, and cool them slightly under cold water.
3. Add the noodles to the vegetables in the pan, then add the golden tofu. Pour in the soy and teriyaki sauce, stirring well to combine the flavors. Cook for 2–3 minutes over medium-high heat.
4. Garnish with sesame seeds and fresh spring onion, if desired.
