  • 0. Prepare the zucchini by trimming the ends. Since they must be cooked with their skins on, they must be organic.
  • 1. In a tall pot of hot water, cook the whole zucchini for about ten minutes, or until they're tender enough to pierce with a fork. In a small saucepan, boil two eggs. They should be hard-boiled in eight minutes. Once cooked, remove them from the water and let them cool.
  • 2. Remove them from the water, place them on a large plate, and let them cool. When they're safe to handle, cut them in half and, using a knife, scoop out the inner pulp. Place the pulp in a bowl with the other ingredients.
  • 3. Add the chopped olives, washed and drained salted capers, sliced hard-boiled eggs, shredded cheese, grated Parmesan cheese, and a drizzle of olive oil to the zucchini. No need to add salt. Use an immersion blender to puree any larger pieces.
  • 4. Spoon the mixture into each zucchini halves and arrange them on a baking sheet lined with parchment paper. Finally, drizzle a thin strip of non-dairy cooking cream over each zucchini. I used gluten-free coconut cream.
  • 5. Bake in a preheated oven at 175 degrees for 15 minutes or until the top layer is no longer crispy. Serve.
